Fresh Culinary Sage (Salvia officinalis) has a more balanced, richer flavor than dried, and you'll find a pinch of its crushed leaf enhances Tomato, Eggplant, and Beans. It is a traditional herb for poultry stuffing and a natural partner with pork, sausage, and cheese. For a really delicious dish, saute chopped fresh Sage with Onions, Garlic and a squeeze of Lemon juice to add to fresh pasta. Growing 2 1/2ft tall, sun loving Sage's soft-colored foliage and profusion of lovely purple-blue flower spikes blend beautifully into any herb garden color scheme. Hang bunches of gray-green Sage in the kitchen to add a nice herbal ambiance.
