The gardens at the Falsled Hotel, situated on the island of Fyn where Hans Christian Anderson was born, only reinforce the fairy tale atmosphere that permeates the 16th century smugglers’ lodge-turned-inn. Climbing roses engulf a covered path that runs alongside the inn. From the top of the arbor, it’s an easy leap to the thatched roof. A rose covered brick patio, where breakfast is served. Grasses, clipped and wild, create contrast. A miniature orchard yields apples. Rows of dahlias provide cutting flowers for the hotel in mid-summer. Past an impossibly green lawn, a view of water too blue to feel real. The garden’s strawberries are destined to reappear on the hotel restaurant’s summer menu. Cauliflower, basil, chard and lettuce.
